Tasty soups are a great dinner option for rainy or cooler weather days. Soups are easy and quick to make and require few ingredients. This recipe for carrot ginger soup goes great with grilled sandwiches, chicken salad or a simple cheese board with crusty whole wheat bread. Buon appetito !

Ingredients
4 C carrots, peeled and chopped
½ onion, chopped
1 C sweet potato, peeled and chopped
5 C chicken stock
2 tbsp garlic
2 tbsp fresh ginger, minced
2 tsp dried thyme
1 tsp crushed red pepper flakes
Himalayan pink salt and pepper (to taste)
Olive oil
Pepitas, almonds or sour cream to garnish

Directions
Sauté onion in olive oil for 5-6 minutes. Add garlic and ginger for 1-2 minutes until golden. Combine carrots and sweat until aromatic. Add sweet potato, chicken stock, thyme, crushed red pepper flakes and salt and pepper to taste. Cook on medium/medium-high until softened, about 20 minutes.

Remove from heat. Separate veggies with a ladle (leaving liquid) and process in batches in a food processor until smooth. Combine pulp with reserved liquid and mix. Serve with pepitas, sour cream or almonds sprinkled on top.
